Cast-Iron Skillet Egg White Veggie Omelette

Leg day + Tabata never fails to make me the happiest camper ever! I rocked it this morning … love feeling the burn! Push yourself today with your workout and nutrition. There’s nothing like really being proud of yourself!

After my endorphin-filled leg & tabata workout, I had an AWESOME breakfast! I have come to learn that cast iron skillets make anything and everything taste better. They just do Smile

 Cast-Iron Skillet Egg White Veggie Omelette

Ingredients:

  • Egg whites (6)
  • Coconut or Almond Milk (Splash)
  • Spices (Garlic salt, Pepper)
  • Nutritional Yeast (A couple sprinkles)
  • Veggies of Choice (Mushrooms, Kale, Mustard & Collard Greens)

How-To:

  1. Mix egg whites, splash of milk substitute & spices.
  2. Pour into pre-heated iron skillet on stove-top.
  3. Sprinkle with nutritional yeast.
  4. Add veggies on top (you can sautee veggies with added spices before hand for more flavor!).
  5. Fold over & cook through.
  6. Add additional nutritional yeast on top for an even “cheesier” flavor!
  7. ENJOY!

I had an equally delicious cast-iron skillet egg white omelette yesterday with the addition of avocado. Oh my goodness YUMM! Avocado added to anything just makes it THAT. MUCH. BETTER! Open-mouthed smile

    i need to use my cast iron more — do you spray it before hand? i’ve used it for other stuff but never eggs !

    I love stainless steel…everything slides right off if prepared properly….
    those omlettes look delicious… I am wheat, almond, and dairy sensitive..so I love the idea of a bit of nutritional yeast.. I hadn’t used it in a long time so it was great to see it in your recipe … I will bring it back on board…. will make that am omg it’s egg whites again meal so much better :0)

      I completely agree! I regularly stay away from gluten, nuts & dairy as well, so I love additives like nutritional yeast – gives that “cheesy” flavor :) It really does spice up breakfast a bit!
